Cabernet Sauvignon Serravalle DOC Vino di Colle
The “Colli Bolognesi – Serravalle Sub-zone” Controlled Origin Certification (Denominazione di Origine Controllata, DOC), assures origin and quality of wines produced in this particular geographical area, imposing strict rules on production procedures and quantities.
Before bottling, we age this wine for at least two years.
Ruby red wine, becoming garnet red with ageing, the Cabernet Sauvignon has a peculiar winy scent, dry, full, soft, harmonious taste, alcohol content: 12.5%; total acidity: not less than 0.5 per cent; dry extract not less than 20 grams per litre.
Well balanced with pasta courses and the famous “Ragu’ alla Bolognese”, it suits very well cold cuts, meats and roasts, but it gives the best with game or Parmigiano Reggiano cheese.
Suitable to ageing, both in bottle and in wood, that exalts the roundness and aroma.
Should be served at room temperature, open at least 30 minutes before serving and, if possible, left separating |
